Well we did return as promised..!

We thought it may not beat the first friday brunch at spectrum..!!

Reputation of the champagne brunches and food aside, this is an excellent choice of venue for late dining as the kitchens serve until 1am and the attentive service continues well beyond the official closing time.

The open kitchens are reassuring in a city where the quality of cooking can be hit-and-miss. Softer lighting for evening dinner would have been expected for a restaurant of this league and the lack of smaller tables indicate its popularity as a brunch or office dinner spot for large groups rather than tete a tete dining. We got a table for 4 to 2 people even though we'd booked in advance for 2.

The wine list provided conversation fodder in its range of offerings although the staff were too enthusiastic about mindlessly recommending their house specials. The menu contained a sizeable representation of cuisines from around the world but there was a marked emphasis on the S.E. Asian countries.

The bread basket arrived in an intrguing wire contraption but contained a nice variety of carb-y nibbles as we waited for our food to arrive.

We chose a selection from the Japanese menu. The seafood salad was a hearty portion of scallops nicely marinated in a Japanese-style vinaigrette. Our yellowtail and red snapper sashimi contained generous slices of prime cuts. The chicken ball and quails egg teppanyaki was an unusual combination which worked after a good coating of teriyaki sauce.

The prices are to be expected, with the wines typically on the hefty side. However, the professional service and reliable kitchen expertise still makes this place good value for its money.

The ubiquitous Dubai Champagne Brunch is one not to be missed. Spectrum on One is one of these.

A warm welcome with Moet greeted us at the door, and as we made our way to the table, the room was buzzing with people delighting on the vast array of gorgeous treats awaiting our palates.

It was difficult knowing where to start, should we go for the seafood, the salad, soups or sushi? We opted for a bit of salad to ease ourselves in, with the salad chef conjuring up a simple caesar salad for me and a mildly spicy Thai one for my friend. Onto the seafood - great slabs of langoustine, some mussels, a few prawns sunk down with a hasty and spicy bloody mary was next. It was all fresh and exquisite.

The afternoon whirled by in a haze of Moet, chatter, getting up for trips to the Indian section - where they make you a fresh concoction and real chapatis or a stir fry sensation at the Chinese counter. Sushi is all freshly made and each chef in their section delight and try to seduce you with their wares - a bit like an outdoor food market albeit a more elegant setting. There was more, but I couldn't quite manage a full roast as well as my dim sum and Indian tikka Masala. Maybe next time.

A thoroughly enjoyable experience and worth splashing the cash for. Not cheap at 400 AED/head but a great way to enjoy some spectacular culinary delights and to catch up with friends.

The champagne brunch at spectrum on one was superb!!

Each and every member of staff wished us an enjoyable brunch as we entered with a glass of Moet, which was topped up regularly! The atmosphere was electric and the food from all cuisines was amazing. There is a fantastic choice of desserts and the cheese room had an extensive choice to choose from as well as different ports to try!!

HIGHLY RECOMMENDED! We will return for sure!

I wonder why its under "indian" when their menu has everything from thai to chinese to sushi to international.

Anyways - the menu is gr8 with so many choices...

good value for money

staff is well trained

good bar selections

and most important - the food is execellente!!

The brunch is of a very high standard. The food quality and choice is superb- don't miss the Wagyu beef. I found it a little stuffier than some of the other brunches and was disappointed to find that you couldn't mix champagne with other drinks. It seems a bit ridiculous to not be able to have a glass of champagne to sip at throughout the day as well as another drink of your choice. (considering the price too at 405 dhs, one of the most expensive in Dubai)
